Lentil Sausage Soup - pressure cooker 10min ( or slow cook 4 hours )

One package of Italian Sausages ( usually 6 )

2 TBS butter

1 medium onion diced or chopped

2 TBS chopped fresh ginger

1 Clove garlic with germ removed, diced

1 small can fire roasted chiles, like ortega or substitute roasted Anaheim or poblano

2 TSP garam masala

1 lb rinsed lentils

Cayene pepper ( pinch )

2 to 3 strips lb bacon diced ( optional )

8 cups chicken broth

Sour cream or yogurt to garnish top when served

Brown and render diced bacon ( optional). Remove Bacon and add Sausage and butter till lightly browned then remove. Saute onion few minutes then add ginger for a few more then garlic at end. Add gram masala to toast. Be carefule not to burn or overcook when adding garlic or garam masala.

Add whole sausage and bacon back in, then broth and lentils. Set pressure cooker to high and 10 minutes and allow natural release of pressure.

Serve with dollop of sour cream or yogurt. If only serving two then cut lentils and broth in half.
